Just spent the day cleaning and adjusting a twin carb bike. (Ducati Monster 750) It wasn't running at all, but now it runs and will rev up to WOT no problem. Until... Get on the bike and get going. About 100 yards out it dies and refuses to start until it's sat for a few minutes.
Whatcha think? Valves?
EDIT:
Totally clean carbs. We took them completly apart and cleaned every single milimeter of them. Blew out all the jets and the ports, line, mount holes and everything. Needles, floats, EVERYTHING. replaced vacuum line to the fuel pump, removed an extra fuel filter, adjusted the F/A mix and the thing runs like gangbusters as long as the drive train is not engaged.

Also replaced vacuum line to the fuel pump, all new fuel line, new fuel filter, new main jet (132.5 which is stock) and new gasket sets on the carbs.

This is what I recommended to the owner;
1. Replace plugs and plug wires. We already know they need it. 2. Replace the fuel pump. (The one we changed the vacuum hose on today) 3. Check your ignition module for shorts that might be shaking loose as you ride. 4. Replace any lines that are cracked or old and brittle that could possibly be leaking. They are only made to last about 10 years and your bike is 17. Use the chemical resistant hose if you can.
If this all doesn't work, (but I think it will) then it's in need of a valve job and that's more than I'm setup to handle.

If it's not the tank vent it's probably the valves. I'd ask Cyborg, he works on that kind of bike (big) all the time. He rode a Ducati to work for a while, I think it was a monster.
