i have THREE filler caps.. one for the gas.. .easy enough.. one - plastic pop-on pop-off cap for coolant next to it... and one under the seat? is that for coolant also?

Yes that is the radiator cap just like on a car. Alleyoop

then the question is.. why do i have a coolant (rubber) cap next to my gas cap?

Also called expansion reservoir. Use this tank to check and add coolant. It will have full and add marks on it. If the radiator needs fluid it will pull it in when the bike cools down.

JUST like a car, now a days you never take the Metal Cap off the Radiator you always use the reservoir to top it off if low.
