Why is it important to change brake fluid? I only heard that if it gets to hot it can boil and contaminate it? Is this true?

Brake fluid is like a sponge it love's moisture so after time it contaminates brake parts and parts will get frozen or won't work right.

It does absorb water from the air,,,I change it out every 4-5 years,,,,but I've gotten older bikes that had fluid that looked like bock beer and still worked fine,,,,,

It's not as noticeable in small two wheel vehicles but the water and air that accumulate in the brake fluid makes it weak and the lever/pedal will have to be depressed farther for the same action. The spongy fluid needs to be compressed more than the original fluid. It was so easy on my motorcycles I changed it every spring. Air and water collect more in the wet winter months.
