They need some rendering is all.
Kind of like what I did to the pork jowl I will be having for breakfast. Mostly fat but after boiling in the crock pot I forked out the meat and put the pot on the porch, the grease gets hard on top and the juice under jells. I just put the meat and black eye peas back in and as soon as its hot I will be digging in.
