I can tell you what I went through with my Pegasus. It's not a 250 but it's water cooled and CF Moto pretty much did an exact copy of what they did on the Helix clone as far as the cooling system. My Peg's temp gauge would get right up to the red zone but not quite get into it. I wasn't real comfortable with this so I decided to purge the system even though a dealer told me CFs should be good to go from the factory.
I took the coolant intake hose off of the water pump on the right side of the engine and, as you said, a big gush of blue fluid came out. I stuck a garden hose in the filler and let it run while the intake hose was off. Then I put the intake hose on and took the thermostat housing off and did the garden hose bit again. More blue liquid came out the top of the engine. Then I took the intake hose off once more and let all of the water out of the system. I filled it with 50/50 Prestone with an ounce of Water Wetter super coolant. To get the air out I warmed the engine up until I could see the thermostat open and shut it off. I let it sit for an hour and did it again after topping it off. The third time it didn't need topping off so I figured I was go to go. The temp needle hasn't been past halfway since. So since you had the blue antifreeze too I'd say flush it and refill with some different fluids and see what happens. JMO, Rich
