When starting cold, runs like a champ. Coming home in the late afternoon had a hard time to keep it from stalling at the every stop (actually stalled several times) light. Had to keep it at least at 2100 rpm. I have reset the valves less then 1000 miles ago. Any clues?

Sorry to say but those are classic symptoms of tight valves, probably just your exhaust valve has tighten up again. Did you set it at .005" the last time you adjusted the exhaust valve. Alleyoop

...that's what I was afraid off, the dreaded valve job. I have no garage, so it is a challenging task. Thank you Alleyoop!
P.S. the valves were set per spec: .oo4" upper and .005" the exhaust
P.S.S. I had an oversize (300cc) kit installed and the mechanic never readjusted the carb. Could this effect the performance?

WOW!! a 300cc KIT nice..... You bet it would effect performance if the carb was not adjusted for the more displacement. Did he rejet the carb or just put carb that was on the 250 back on without rejetting. You added quite a bit of displacement to the 250 so you are probably not getting the full potential out of the extra displacement. Alleyoop
