I read that an overheated engine may develop a warped head. What are the symptoms I should be looking / listening for?

On a liquid cooled motor you will have antifreeze and possibley oil out not to mention loose of compression. Alleyoop

When I got it started, it was running extremely s-l-o-w... I had to really give it some gas to keep it running. When I let off the gas, it idled down to nothing and stopped. From what I've read, the head could've warped just enough to partially restrict the pistons movement and without giving it gas, it just slows to a stop. I haven't seen any evidence of mixing fluids....yet. I really hope I'm wrong. I hope its something simple like a vacuum line popped off or something ridiculously easy to fix. What could've happened to it during the overheat that might cause this? I haven't opened the engine area yet because I wanted to finish the other stuff I was working on. I have the new forks installed, new ignition switch, and I'm in the process of installing the new HID headlights. I'm also swapping out the junk turn signal bulbs with the ones Alley recommended. Once I finish all this, the bike is going to be really sweet, as long as its running correctly. The only thing left to fix after this is all corrected is the muffler. Any help is appreciated.

No a warped head won't restrict piston movement. I don't think you have a warped head though. Sometimes when an engine overheats the piston rings get stuck in the piston instead of springing out. Sometimes, in time, the situation corrects itself. I would raise the idle, take it on a ride and see what happens. If the head is warped you'll see gales of white smoke in no time. The cooling system pressure will spray water into the engine pretty quickly.

A quick compression test will tell a lot too/

What are the symptoms of a warped head? You act like Alley.....da-dump, I'm here all week folks.
If I can elaborate on what John said and in doing so act like compression was my idea....I think it may be the compression.
I remembered the compression factor was high on that engine but not this high!
Get a compression tester, make sure it has the 10mm standard, (not long ), adapter. Harbor freight sells them for about $30.00.

Well, I have Thursdays and Saturdays off so I'm hoping to get this all figured out tomorrow and be riding before nightfall.

Hey, it just struck me that I told you 10mm for the adapter. That's for a GY6. The 250 is a 12mm. Sorry, but the one I got from Harbor Freight had both of them anyway.
