So with my Chinese scooter, the speedo is KPH and MPH like I'm sure most others. However, I'm pretty sure my odometer is in kilometers as I'm racking up digits too fast for miles. Is there a way to correct this. I mean, like replace a gear or something?

Sorry to say no, you could maybe find a speedo that registers in MPH then the ODO will also be in Miles traveled.

The Chinese speedos are junk. Get an aftermarket speedometer, the Chinometer will never work right. Trail Tech makes some nice ones and there's always fleabay and Amazon.

May be a digital with odometer and even trip. The aftermarket ones from china seem to all read in kph but have a way to input the front wheel circumference so what I would do is experiment with putting in the wrong figures so that it would read in miles. You could switch them from kpm to mph but you would be back to what you have now, mph speed and km odometer.
