Need to find Part#/ where to buy UNI/K&N filter for Roketa MC-75-150K and MC-75-150?
Do I need to rejet low and high speed jets?

Filters www.buggypartsnw.com/You need oil too... If your stock filter is paper type you will need to re-jet probably. If it is a stock foam filter chances are you can just swap Depends on many factors |

does the A/F screw change fuel ratio thru-out rev range or just idle mixture?

Throughout the range...
If that doesn't work, change the throttle needle setting in the top of the carb
If that doesn't work then worry about the main jet.
99.9% of the time the idle jet does not need changing...
