I don't get it. I can't get the wires out of this thing, and it seems so simple! No tabs or anything! How do I remove the wires from this harness?!

If you look closely on the sides of each individual pin or connector there is a tiny tab that springs out locking it in place. Taking a tiny screw driver you should be able to spring it back long enough to get them out.

You have to work from the opposite side of the plug that you have the picture of. A jeweler's screw driver (flat head) should be able to fit inside to depress the tab. Here's a tool which should handle all of your pin removal needs:
