My scooter is AC-fired. Can I install this pair of bulbs, "BA20D 5500K Headlight Halogen Bulbs DC 12V 35W LED Xenon Lights White", in place of the original incandescent bulbs?

yes but no, it cannot be both xenon and led. If it actually is led then no because most scoots are running the headlights with ac from the stator, so it needs rewired for dc

I can't understand why the yellow AC wire goes to the headlight relay.

My Red Fox Razor burned out 3 headlight relays in 200 miles For 1000 miles now, I have just used a jumper wire in the socket where the relay plugged in, between the 12v dc socket, to the purple headlight wire socket. The headlight is doing okay, but maybe it could be brighter by using higher ac current from the stator. I was wondering why the yellow stator wire is there, and if that is what caused the relays to burn out. Good luck.
